Let me put on my apron and we can start! First of all, prepare the fresh pasta dough, so combine the flour with the eggs and a pinch of salt and knead until you have a dough like this, wrap in cling film and let it rest in a fresh place for at least half an hour. If you want to see the videorecipe, look for "fresh egg pasta" on the Yellowsaffron channel or download the iphone application. And now, move on to the other preparation, the ravioli filling, so add no more than one tablespoon of oil and a crushed clove of garlic to a pan, and sauté until golden brown. Meanwhile, in a food processor, combine... the salmon, cut into pieces, and the shrimps. Then pulse until coarsely chopped.. small pieces should still be visible. It's ok... now sauté in the pan... for a few minutes. Here we are... now add the brandy, or use white wine if you prefer... and let it evaporate completely, then turn off the heat and let the mixture cool a bit. Now add the ricotta cheese to the shrimp and salmon mixture... pepper... a pinch of nutmeg... and salt, but before doing that, taste to see if it needs it, since salmon may be salty enough. Finally add a few fresh thyme leaves <b>...</b> |

This dish could also be called my favorite salad, because there are plenty of variations which are so delicious and just as easy to make. For example: I sometimes throw in some dried fruit, like cranberries and/or cherries and add ginger to the vinaigrette. Or I boil potatoes and an egg and add some high quality olives, for a Nicoise type salad, just to name a couple. I don't usually keep a recipie of my creations, but I'll try to get the ingredient amounts correct... Please make adjustments as you see fit for your taste buds ;) Ingredients: Serves 2 Salad Greens ~ One large head, 2-3 small heads or 3/4 bag pre-washed organic mixed greens; Tomatoes ~ 1 large or 3-4 small (the heirlooms I used are small ones); Avocado ~ 1 medium avocado, I prefer Cirone Farms Hass because of the super creamy texture & I happen to have access to them on a regular basis, but your local farmer will do. Fresh Salmon ~ two 6-8 oz portions; Extra Virgin Olive Oil ~ 1 Tbsp. or enough to coat salmon; Salt & Pepper (good salt & fresh ground pepper preferably) Vinaigrette 2 Tbsp. Extra Virgin Olive Oil 2 Tbsp. Cider Vinegar (or Sherry or balsamic or another type you like to use) 1 Tbsp or more of Citrus: lemon, lime, orange, etc. (whatever you have on hand) 1 t. honey, brown sugar, molasses, etc. salt & peppa |

Ingredients: 2 Tbs butter 3 Tbsp extra Virgin Olive Oil 10 Asparagus Spears 1 Large Onion 4 carrots, julienne cut and chopped in to small pieces 10 oz Crimini Mushrooms 10 oz white mushrooms 3.5 oz chopped black Olives 1 cup white wine 1.5 cup tomato puree 1 quart vegetable, chicken or fish stock 1 lb of fresh or fresh frozen Wild Salmon fillets fresh, chopped basil, parsley and celery leaves salt and pepper to taste Directions: Place Olive Oil and butter to a warm pan add Asparagus add carrots add carrots add salt and cook a couple of minutes add onions add Crimini and white mushrooms add black olives add white wine and tomato puree and add pepper Cook a few minutes until all vegetables are tender remove vegetables from pan; cover them and set them aside Add oil to pan add salt to fish and lemon juice cook fish a couple of minutes on both sides then cover it and set it aside put half of the vegetables back in the pan and slowly ladle in the warm broth one ladle at a time until all of it is incorporated mash vegetable sauce in the pan with a potato masher add barely under cooed spaghetti and toss add fresh herbs add the salmon back to the pan for a couple of minutes Place reserved vegetable mixture to serving platter top it with spaghetti and salmon sauce Add Parmiggiano Reggiano if you like ENJOY |

Learn an easy way to cook fish, with no mess. Broil it. This wet rub will be good for 4 pieces of fish. 2 Tablespoon chopped basil 1 green onion, sliced 1/2 teaspoon dried basil, smashed 2 t dijon or whole grain mustard 1 T olive oil 1 fresh garlic clove, minced 1 liberal squeeze of fresh lemon (optional) Mix and rub on fish, and then on a sheet pan with foil broil on high about 3-5 minutes until firm to the touch. Remove from broiler rack, plate, and enjoy! If it's a thicker piece of fish, broil a few minutes until browned, then finish on middle rack until firm. Generally fish will cook at about 10 minutes per inch. |
